“Refreshing fruity and flowery sparkling wine made with local Passerina grape following the charmat method to maintain the natural aromatic character of the variety. Very subtle yeast flavors add some complexity but the original fresh fruit, citrus and blossom are prominent but not too intense. Cleansing finish, vibrant acidity, balanced wine. Strong but bright bubbles, simple but enjoyable, a nice pairing for simple seafood dishes.”
