“This rather decadent yet delicate signature dish (brioche, bone marrow, caviar) by Michael Vrijmoed was paired with the 2023 Anjou Noir from Belargus. The nose is deep and layered, revealing ripe quince and baked apple, laced with chamomile, beeswax and a smoky, flinty edge. The palate is round and lush, driven by vibrant acidity that cuts cleanly through the richness. Chalky minerality and a subtle oxidative touch add grip and tension, leading to a long, savoury and finely sculpted finish. Top!”
